Of course you should use DesktopBSD 
but if you’re eager to test the new and shiny FreeBSD 7 it’s maybe nice to have just one DVD than several CDs. It’s rather easy and Dru Lavigne shows you how to get along with it: Creating Your Own FreeBSD 7.0 DVD
